Golden Syrup Mug Cake

Ingredients
Serves: 2
- 30g butter
- 1 egg
- 60ml (¼ cup) golden syrup, plus extra, to drizzle
- 1 tbsp milk
- 1 tsp vanilla extract
- 75g (½ cup) self-raising flour
- 2 scoops of vanilla ice cream, to serve
Method
- Pop the butter in a small bowl and microwave until melted.
- In a separate bowl, whisk all ingredients until combined—egg, golden syrup, milk, vanilla, flour and melted butter.
- Divide the mixture evenly between 2 mugs and microwave on high for 1 min and 20 secs (or until puffed).
- Top the 2 mug cakes with ice cream, drizzle over a little extra golden syrup and *chefs kiss*!
Chai-Spiced Chocolate Mug Cake

Ingredients
Serves: 1
- 2 tbsp milk
- 1 ½ tbsp vegetable oil
- 1 egg
- 40g (¼ cup) self-raising flour
- 2 tbsp brown sugar
- 2 tbsp dark cocoa powder
- 2 tbsp chopped dark chocolate
- ¼ tsp ground cinnamon, plus extra, to sprinkle
- ¼ tsp ground cloves
- ¼ tsp ground ginger
- 1 pinch of ground cardamom
- 1 scoop of chocolate ice cream, to serve
Method
- Whisk the milk, oil and egg together in a bowl.
- Add in all the dry ingredients (flour, sugar, cocoa, chocolate, cinnamon, cloves, ginger and cardamom) and stir until smooth and combined.
- Pop all of the mixture in 1 mug and microwave on high for 1 min and 30 secs (or until the mixture rises).
- Top the mug cake with a scoop of ice cream, sprinkle with the extra cinnamon and enjoy!
Biscoff Mug Cake

Ingredients
Serves: 2
- 30g butter
- 1 egg
- 1 tbsp brown sugar
- 2 tbsp milk
- 1 tsp vanilla extract
- 75g (½ cup) self-raising flour
- 100g (⅓ cup) biscoff spread
- Biscoff biscuits, to serve (optional)
Method
- Pop the butter in a small bowl and microwave until melted.
- In a separate bowl, whisk together the egg, sugar, milk, vanilla, flour, melted butter and 1/4 cup of the biscoff spread until combined.
- Divide the mixture evenly between 2 mugs, top each with 2 teaspoons of the remaining biscoff spread and microwave on high for 1 min and 10 secs (or until puffed).
- Serve the 2 mug cakes with biscoff biscuits, ‘cos there’s no such thing as too much biscoff. Trust us!
